KFC Value Meal

My kids challenged me to try the KFC. They mentioned that I have tried pasta, pizza, burgers and etc, but I haven't try the KFC. So I wanted to try and found this KFC recipe in my friends Facebook. I used the recipe for KFC chicken but of course I modified it little bit because I could not find some of the ingredients.My kids really love it they said it was better than KFC and it was really finger lickin good. This was way cheaper than the KFC. I bought fresh chicken from market, and the ingredients also was fresh so the taste was really nice. I only spend RM 60 for 21 pcs chicken with side dishes. :)  
KFC Value Meal
Ingredients
1 whole chicken, cut into pieces
3 beaten eggs
oil to fry

For the coating
2 cups flour
4 teaspoons paprika
1 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning (or chicken stock powder)
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon parsley
1/2 teaspoon thyme

Marination
1 teaspoon garlic paste
1 teaspoon ginger paste /juice
1 teaspoon onion paste / just the juice
1 teaspoon salt

Method:

Clean and Marinate the chicken with garlic, ginger and onion juice / paste for 1hr or more. Sift flour and add together all the coating ingredients and grind finely with a mortar and pestle and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.

Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.

Mashed Potato
5 Potato – I use US potato. 
½ cup fresh milk
1 tablespoon butter
Salt and pepper
Peel of the skin and boil the potato with little salt. Then drained the water and mashed the potato. Put the whole thing in the pan under the low fire and add fresh milk, butter, salt n mix together. Can add little pepper if you want.

Coleslaw
Cabbage
Carrot
Mayonnaise
Vinegar
Salt and sugar

Chopped the cabbage and carrot. Then add Mayonnaise and vinegar. Lastly add salt and sugar and mix well. If you want can add little pepper also. Cover and refrigerate.

Gravy
1 tablespoon butter
2 tablespoons all-purpose flour
1 cube chicken stock
1 cup water
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper or black pepper sauce
½ teaspoon thick soya sauce - optional


Heat the pan and remove from heat and add the butter and flour. Mix together and add the water and chicken cube. Then add the remaining ingredients to the saucepan, and stir over the low heat.
bring the gravy to a boil. Reduce heat and simmer for 10 to 15 minutes, or until thick.
